OK so for this to be WLC approved you may have to remove the precious bacon from the recipe – unless you can find some without sugar used to cure it. The mayo either has to be homemade, like either of my recipes (Olive Oil Mayo & Paleo Mayo), or a store bought kind with no soy oil, corn oil, or sugar – which is tough to find (I believe Tessemae’s is good to go).

Tuna Avocado Salad

Ingredients
  1. 1 avocado, cubed
  2. 2 cans white tuna
  3. 1/4 cup cup mayonnaise
  4. 1 red bell pepper, diced
  5. 2 stalks celery, diced
  6. 1 tbsp diced chives
  7. salt and pepper
  8. 2 strips cooked bacon, chopped up (no nitrates, nitrites, or sugars to be compliant!)
Instructions
  1. In a medium bowl, combine the bell pepper, celery, chives and tuna fish. You want all of the ingredients well incorporated.
  2. Add in the mayo, salt and pepper and mix everything up.
  3. Now, add the avocado and gently stir everything together. Don't mush up the ‘cado!.
Notes
  1. To serve, you can just put everything in a bowl, top with the bacon bits and go to town.
  2. OR you can spoon what you can fit back into the avocado shells, and then top with the bacon. You could even fill romaine lettuce leaves and add some tomatoes for BLT Tuna tacos!
