So I’ve been trying to save some money lately, and eating lunch out every day doesn’t exactly lend to a fat wallet.  Buying a different protein for each day isn’t the definition of ‘efficiency’ either. The easy answer for money saving: chicken. The problem: it’s boring as hell. How many grilled chicken breasts can you eat before you wake up from a black out covered in pizza crust?

Here’s an easy answer. Chicken is the single most boring protein you will probably ever eat. That being said, it’s the easiest thing possible to season any one of a thousand ways. This week, I decided to make three different marinades for my chicken, and give myself some ready-to-go variety to get me through the week. If you are really crunched for time, go ahead and cook all of them at once and just grab and go as you need them!

Make each marinade in a zip lock bag (don’t even bother dirtying dishes!), and through a couple of chicken breasts in each one.

Marinade #1: Italian Herbs
Pictured below sliced and topped with pesto along with a salad of sliced tomatoes and mozzarella cheese, drizzled with olive oil and balsamic. Obviously, for WLC you have to scratch the mozzarella.

1 tbsp olive oil
1tbsp white wine vinegar
2 tbsp italian seasoning
Pinch crushed red pepper
1 garlic clove
Salt and pepper

Marinade #2: Spicy ‘Buffalo’ 

1 tbsp apple cider vinegar
1 tbsp white wine vinegar
1 tbsp olive oil
1 tbsp hot sauce
1 garlic clove
Salt and Pepper

Marinade #3: Garlicky Lemon Pepper

Juice of 1 lemon
1 tbsp olive oil
2 garlic cloves
Salt and LOTS of black pepper
Pinch red pepper flakes

Let the marinades sit for a minimum of 20 minutes and up to 24 hours, cook your chicken as needed and get on with your day!
