When you make mayo at home you’ve got to put it to good use! Tuna salad sounds kinda boring, but add some creamy avocado and crispy salty bacon and you’ve got a delicious meal full of healthy fats.


1 ripe avocado, cubed (don’t know how? Here’s a quick video I found.)
2 cans white tuna
1/4 cup mayonnaise
1 red bell pepper, diced
2 stalks celery, diced
1 tbsp diced chives
salt and pepper
2 strips bacon, chopped up*
*I had cooked up a bunch of bacon in the morning to have on hand as a snack and it made the perfect topper for this recipe.

1) In a medium bowl, combine the bell pepper, celery, chives and tuna fish. You want all of the ingredients well incorporated.

2) Add in the mayo, salt and pepper and mix everything up.

3) Now, add the avocado and gently stir everything together. Don’t mush up the ‘cado!.


4) At this point you can either put everything in a bowl, top with the bacon bits and go to town.  OR you can spoon what you can fit back into the avocado shells, and then top with the bacon.  Refrigerate any leftovers (obviously). You can make this exact same recipe with chicken if you’re not a fan of the fin.
