Roasted Lemony Game Hens

This goes REALLY well with my Paleo Stuffing and makes for a really really nice dinner. Ok here we go. It’s so freaking easy and alot of the ingredients overlap so you don’t have to buy a thousand different things and alot of the stuff you probably already have on hand.For the game hens (two of em):2 Cornish game hens
1 onion, quartered
2 cloves garlic cloves, smashed
2 lemons
2 stalks celery, cut into 2 in peices
1 shallot, diced
2 tbsp butter
2 tbsp olive oil
1 tbsp ground sage
1 tbsp rosemary, diced
1 tsp paprika
1/4 cup chicken stock

Preheat oven to 450 F.

1) In a saucepan over medium-low, heat olive oil and melt butter. Add the zest and juice of one lemon, the shallot, rosemary, paprika and sage. Take it off the heat and let it sit while you get the birds ready.
2) Cut the second lemon into wedges. Put into each game hen: 1 lemon wedge, 1 peice of onion, and a few pieces of celery. You can truss it if you’re feeling gangster. It just makes sure it cooks evenly and keeps it looking pretty. (Tie the drumsticks together)
3) Pour half of the butter mixture onto each game hen and use your hand to really rub it in all over each bird, top with some salt and pepper. Put the leftover lemon and onion pieces in the pan along with the chicken stock.
4) Roast at 450 for 5 min, then lower to 375 F and go for another hour (looking for 165 internal temp) and when it is done let it rest for ten min.
