This is a go-to side dish for me, especially with meals that are heavy on the sauce like,

Butter Chicken
Pulled Pork
Ginger Chicken

 

Really, it’s just a great substitute for rice and more flavorful in my opinion. Here’s my very quick recipe:

1 head cauliflower, cut into florets
1 tbsp ghee butter
1 onion
2 cloves garlic
Salt
Pepper
Trader Joe’s 21 Seasoning Salute (optional)
1 tbsp butter

1) Put the onion in a food processor and pulse until it’s well diced.  Sauté over medium heat in a saucepan with the ghee and a pinch of salt until translucent (5 min).

2) Now in the food processor: the cauliflower florets and garlic cloves.  Pulse until it looks like, you guessed it, RICE.  Add this to the pan with salt and pepper and cook for 8 minutes over medium heat.  Add butter and 21 Salute (if using) and give it a few stirs and another 2-3 min.  That’s it. Go eat.
