I was asked today how I come up with smoothie recipes.  Sometimes it’s stuff I find online, that I change to fit Whole Life Challenge rules or the Paleo lifestyle.  Then there are times that I try to think of ways to mimic certain flavor profiles (stay tuned for the Snickers Bar tomorrow!).  This is one of them.  I looked up a recipe for Pineapple Upside Down Cake and figured out what I could take and put into my shake.  Here’s what I came up with:

Pineapple Upside Down Cake


3/4 Cup Frozen Pineapple
1 cup Spinach
1/4 cup coconut milk
3/4 cup coconut water
1 tbsp blanched almonds (or almond extract)
1 tbsp date puree
1 tsp vanilla extract (no alcohol if WLC)
Pinch nutmeg
Pinch cinnamon

Yes another brightfully tasty, and filling, smoothie for lunch.
