As I stood in my kitchen, staring at the snow covered yard, stoking the wood fire that heats my home, I couldn’t help but wish I was somewhere with a beach in my view and a drink in my hand.  So, I did the one thing I could do: make a breakfast shake that tastes like a rummy beverage: The Pina Colada!



Pina Colada 

1 cup pineapple
1 banana
1/2 cup coconut milk
1/2 cup water
tsp coconut extract (optional but delicious)
Juice of 1 lime

*as with all of my smoothies and shakes: if you want protein, either crack a raw (cage free, organic, farm yada yada) egg into it or add your favorite protein powder.
