This is the result of an attempt at making an apple dessert with no grain or sugar (or sweetener of any kind) … Turned out pretty tasty!

For 2 servings:

2 apples, peeled/cored/quartered/sliced
* I used one granny smith apple and one Fuji apple
Juice of 1 lemon
1 tbsp cinnamon
1/4 tbsp ground clove
1/8 tbsp ground nutmeg
Pinch of salt
4 tbsp cold butter, cut into pea size cubes
1/3 cup almond meal
1/4 cup shredded/unsweetened coconut
1-2 tbsp cold water

Preheat oven to 375

1) Mix together the sliced apples, lemon, cinnamon, clove, nutmeg and salt. Set aside.


2) In a food processor, pulse together butter, coconut, almond meal and salt until it looks a bit like Parmesan cheese. Add 1 tbsp of water and pulse. Keep adding cold water until you get a texture kind of like crumbly wet sand (below).

20120918-180124.jpg3) Assemble the crumble by putting the apple mixture into a 6″ x 6″ baking dish (or two ramekins) and topping with your crumble mixture.

4) Bake 35-40 min, until crumble is golden brown and apples are caramelized and tender. Let stand 10 min before serving. (top with fresh whipped cream if you’re feeling good!)
