Instagram. Is. Awesome.

I mean it. Thanks to Instagram, I’ve managed to connect with so many very cool people. Lots of foodies. Lots of CrossFitters and tons upon tons of like-minded, food geeks who want to eat well and help others do it, too.

One of those exceptionally cool people is Kiersten from the blog Vibrant Life Army Wife.  She’s “a 20 something self proclaimed nutrition nerd with a love for yummy real food, homemade beauty care, and natural healing. I live in Fort Hood, TX with my handsome hubby and two fur babies.”, who I somehow came across while perusing pictures and not only did I find that she’s got some serious skill when it comes to taking pictures of food porn, but she’s also in the same Nutritional Therapy Practitioner Program that I am! How cool!

She’s one of the first 21 Day Sugar Detox coaches (brand spanking new program for 2015), and she has a knack for making some really amazing recipes that are chock full of good for you stuff. 

I asked her to lend me a hand, and come up with recipe that would be easy for busy folks and compliant for the Whole Life Challenge. She took it a step further and made an easy dessert that’s not only WLC approved, but 21DSD approved as well! Hey everyone! I’m super honored that Kristin asked me to share a recipe with you guys. And I promise it’s a yummy one so stay tuned…

I don’t know about you but whenever I “can’t” have something, I want it.  When I was doing the autoimmune protocol and I couldn’t eat my homemade mayo, all I wanted was mayo. When I was doing my last Whole 30 and I couldn’t have any baked goods, all I wanted was a cookie. And when I’m on the 21-Day Sugar Detox (which I am right now) all I want is a sweet potato and some raspberries. Life is funny that way. Or at least my brain is. And when I feel deprived, I go overboard eating all the things I’m not supposed to eat.

So what I’ve learned about myself from all the different challenges and healing protocols, besides that I’m intolerant to dairy and nuts, is that I need to find a way to healthfully and mindfully eat the things I love. That’s why I love the Whole Life Challenge. You’re allotted the wiggle room to consume your fruit sweetened treats and indulge in that glass of wine every once in a while without feeling guilty or like you failed. Pretty cool right?!?

I created this recipe to help me through Day 7 of my 21-Day Sugar Detox when all I wanted was a big bar of chocolate and a bowl of Frosted Flakes (which I haven’t eaten in years but cravings are weird like that).  They are sweetened simply with applesauce, and the addition of cinnamon and vanilla brings out the natural sweetness. I used homemade slow cooker green applesauce so they would be 21-Day Sugar Detox friendly but for the WLC you could use regular applesauce or even some mashed banana. Either way, they will be delicious!

 


21 DSD & WLC Macaroons
by Vibrant Life Army Wife

1/3 cup applesauce
½ cup coconut milk
1 egg
2 tsp vanilla extract (or 1 tsp ground vanilla for WLC)
1 tsp cinnamon
¼ tsp salt
2 cups shredded coconut

Makes about 18 Macaroons

 

Preheat oven to 350 degrees.

  1. Combine applesauce, coconut milk, egg, vanilla extract, cinnamon and salt in a mixing bowl and whisk until smooth. Add shredded coconut and mix until combined.
  2. Using a 1 Tbs scoop, drop batter onto a parchment lined cookie sheet. Bake for 15-17 minutes until lightly browned. Let cool at least 5 minutes before eating.

 

Makes about 1 ½ dozen.
