Oh man did I want some eggs this morning! Runny yolks were calling my name…loudly! I made a commitment, though. 2 shakes for 7 days and I will not falter! One of the things I’m really loving about this week of shakes is that it’s making staying on point, nutritionally, is so easy.  I don’t have to think about anything. No choices to make, no foods to avoid. I just make the smoothie, drink it, and go.  That’s it. So far they’ve all been filling enough to get my through the day and I’ve been making sure that one has veg and one has an egg per day.  Today I rocked an egg in both just because of a longer WOD in the AM and I felt I needed some more fuel.  First up is the Coconut Mango.  This is definitely more a shake than smoothie, as it’s on the thinner side since I used fresh mango instead of frozen.  Honestly, I bet this would make amazing ice cream if you happen to have an ice cream maker at home.

Coconut Mango Morning

1 cup fresh mango
1 banana
1/2 cup coconut milk
1/2 cup coconut water
Lime zest
1/2 tsp coconut extract OR unsweetened coconut flakes
1 egg
