This is a staple salad in my house and it’s crazy easy to make. If you’re dairy-free, just omit the cheese and its still super delicious!

Combine in a bowl:
2 cups cherry tomatoes, halved (I like to use different colors)
Handful fresh basil, chopped
1 oz fresh mozzarella cheese
2 tbsp olive oil
Sprinkle balsamic vinegar
Salt and pepper to taste

Mix it all up and that’s it. I wasn’t kidding about it being easy.
