One more super easy and super cheap side dish that only requires things you probably have in hand anyway.

You need:

2-4 slices of bacon, chopped (uncured NO nitrates!)
3 cups of Cremona mushrooms
1/2 onion, diced
1 tbsp Olive oil
1 tbsp Dried thyme

1) Put your chopped bacon into a cold pan, then turn the heat to medium. Cook, stirring occasionally for 6-8 minutes or until browned and crispy. Remove with a slotted spoon and set aside to dry on a paper towel.

2) Leaving the bacon fat in the pan, turn the heat to medium-high and add in the mushrooms and onions (with salt, pepper, and thyme). Sautée, stirring occasionally, for 8-10 min until the mushrooms have browned. If the mushrooms are too dry, add the olive oil.


3) Return the bacon to the pan, toss and serve!
